  1. Without a really top quality and sharpened knife you will ruin the whole roll during the last part. Believe me, it happened to me, as you must efficiently cut the kitchen film, the avocado, the rice (which is sticky and awkward to cut by itself), and cooked chicken, all of it full of sticky sauce, to make everything more disastrous if you fail.

    I thought I was doing something wrong with the uramaki recipes but at the end the problem usually is the goddamn knife.

  3. The ends can be eaten by the chef or thrown away? I am not Japanese, but i can tell you in a real sushi resteraunt they dont waste anything. Looks good though.
