Homemade Pumpkin Spice
4 tbsp cinnamon
8 tsp ground ginger
2 tsp allspice
2 tsp nutmeg
2 tsp cloves

Pumpkin & Pecan Baked Oatmeal

3 cups rolled oats
2 tsp baking powder
2 tsp pumpkin pie spice
2 eggs
1 cup pumpkin puree
1⁄2 cup applesauce
1 cup milk
1⁄2 cup maple syrup OR brown sugar
1⁄2 tsp vanilla extract
1⁄2 cup pecans, chopped

Preheat oven to 357°F.
In a large bowl whisk oats, baking powder and pumpkin pie spice until they are well combined.
In another large bowl whisk pumpkin puree, applesauce, milk, maple syrup, vanilla extract and eggs until they are well combined.
Pour wet ingredients into dry ingredients and stir thoroughly.
Fold in pecans.
Scoop batter into a muffin tin lined with cupcake liners.
Bake at 375°F for 30 minutes

Easy Pumpkin Pie Dip

1 cup vanilla Greek yogurt
1⁄2 cup pumpkin puree
2­-3 tsp maple syrup
1⁄2 tsp pumpkin pie spice

In a medium bowl combine yogurt, pumpkin puree, maple syrup and pumpkin pie spice. Stir well.
Serve with ginger snaps and apple slices.
Enjoy!

Turkey Pumpkin Chili

1 yellow onion, finely diced
1 red bell pepper, diced
2 cloves garlic
1 jalapeno, seeded and minced (optional)
1lb ground turkey
2 tbsp chili powder
1 tbsp cumin
1 tbsp garlic powder
1 tsp oregano
1 cup vegetable or chicken broth
1 28oz can diced tomatoes
1 28oz can crushed tomatoes
2 cups pumpkin puree
2 can mixed beans, rinsed and drained
salt and pepper
sour cream
green onion

In a large Dutch oven or soup pot heat oil over medium­high heat.
Add onion and red bell pepper and sauté until they’ve softened.
Add minced garlic and jalapeno and sauté for an additional 30 seconds.
Add ground turkey and cook it until it is no longer pink.
Add broth, crushed tomatoes, diced tomatoes, pumpkin puree and beans. Stir well.
Bring mixture to a boil and then reduce heat to low, cover and allow chili to simmer for at least 30 minutes.
Season with salt and pepper.
Serve with sour cream and green onion.
Enjoy!
