Grilled Hash Browns

4-6 potatoes, cubed
6 breakfast sausage, chopped
½ red onion, finely sliced
2 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
salt and pepper

Combine all of the ingredients in a large bowl and toss until everything is evenly coated. Divide potato mixture onto 4 sheets of heavy duty foil. Fold foil to create small packets. Place packets on the grill over medium heat for 15-20 minutes or until potatoes and sausage are fully cooked. Flip them every 5 minutes to prevent them from burning.

Grilled Pepper Eggs

½ tbsp oil
2 bell peppers, halved and seeded
4 eggs
salt and pepper

Coat the skins of each pepper with olive oil. Place each pepper half on the grill and then crack an egg into each. Season with salt and pepper. Grill with the lid closed until the egg whites are set and the yolks are cooked to your liking.

Grilled French Toast Skewers

1 loaf crusty French bread, cut into 1” cubes
6 eggs
½ cup milk or cream
½ tsp cinnamon

Place bread cubes in a large zipper bag. In a medium bowl whisk eggs, milk and cinnamon together. Pour the egg mixture over the bread cubes and shake until all of the bread is evenly coated. Divide the bread cubes on 4 to 6 skewers. Grill over medium heat for 2 minutes per side or until they become golden and toasted. Serve with lots of delicious maple syrup.
