OATMEAL CUPS (makes 12)
1 banana
1 flax egg (or regular egg)
***video has a typo — should say 1tbsp flax to 3 tbsp water****
1/4 cup maple syrup
1 1/4 cups non-dairy milk
3 cups rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon sea salt

– Preheat the oven to 350ºF and grease a 12-cup muffin tin.
Mash banana until smooth, then add flax egg, syrup and milk, and stir to combine. Add remaining ingredients and stir until a sticky dough has formed.
– Divide evenly between each muffin cup, top with desired toppings and bake for 22 – 24 minutes. Remove and let cool completely before storing.
