Chilled Watermelon & Cucumber Salad
2 cups watermelon, chopped
½ English cucumber, peeled and deseeded
1 tbsp balsamic vinegar
4-5 mint leaves, finely chopped
⅓ cup feta cheese, crumbled

In a large bowl toss watermelon and cucumber with balsamic vinegar.
Top with crumbled feta and mint.
Serve chilled.

Watermelon ‘Ice Cream’
Guilt-Free Ice Cream 3 Ways:
1 cup watermelon, chopped
2 ripe bananas, chopped and frozen
2 tbsp almond milk, sweetened

In a food processor combine watermelon, frozen banana and almond milk until smooth.
Pour into a container and freeze for another 15-20 minutes before serving.

Watermelon Mint Sangria
4 cups watermelon, chopped and frozen
2 limes, thinly sliced
6-8 mint leaves
1 bottle rose wine
sparkling water

In a large pitcher combine watermelon, lime, mint and wine.
Stir well and let sit for at least 2-3 hours.
Top with sparkling water just before serving.

Simple Syrup

1/2 cup sugar
1/2 cup water

In a small saucepan, heat water and sugar until sugar has dissolved completely. Allow mixture to cool.
