Delicious Vegan Mungbean Pancakes | Vegan Fitness Recipe

Simple and delicious high protein vegan mungbean pancakes.
Perfect to build muscle or lose fat without having to sacrifice good tasting foods or spend hours in the kitchen.
These pancakes are savory, easy to make and taste incredible. Originally from Korea, kimchi is generally part of this recipe, but I omitted it due to the fishsauce added in the brands here.
If you can find a kimchi without fishsauce, or better yet you made your own one, feel free to chop it up and add it to the batter.
I also used Korean chili paste for these mungbean pancakes. You can find it at most Asian supermarkets.

Ingredients:
1 cup split Mung Beans
¼ cup water
1 tbsp rice flour
2 Spring onions
2 Garlic cloves
1 Onion or shallot
1 tsp pepper
2 tsp salt
1 tbsp korean chili paste
1 tbsp Sesame Oil
1 tbsp coconut oil
2 cups Mungbean or Soybean Sprouts

Prep time: 10 minutes
Cooking time (stove): 10 minutes
Total: 20 minutes

Directions:

1. Soak the mung beans for 2 hours minimum
2. Drain and rinse the mung beans, Add them to a blender with 1 tbsp of rice flour, 1 tsp salt and ¼ cup water. Blend well into a batter
3. Add the batter to a mixing bowl
4. Add 1 cup of mung bean sprouts, the spring onions, the garlic, 1 shallot, the sesame oil and korean chili paste
5. Mix the batter
6. Heat a pan to medium heat with 1 tbsp coconut oil, add the pancakes and cook until slightly brown on each side (3-5 minutes)
7. Top with 1 cup of mung bean sprouts and enjoy with hot sauce
