I do it quite differently, 1.chop carrots and add to pot 2.do the same with potatoes and onions 3.add some garlic 4.add some chopped tomatoes 5.add some boiling water 6.tear some basil and put into pot 7.mix 8.cook for no idea how long I would say about half or a full hour 9.some salt and pepper 10.taste test…NOICE lol this took so long, Thanks for listening

Great soup, but you're skippin' some stuff here : it's a vegetable soup, and you start with meat. Weird. Then : where the fuck is the BASIL ? It's a major mistake dude. BASIL missing in a minestrone is no real minestrone. So don't call it such. Thanks. Same with potatoes : where are yours ? Then Zucchini is also a classic ingredient. But whatever, that BASIL missing took all your credibility. Cheers from southern Europe

Bacon, spanish onion, ( replace celery – green pepper), garlic, chicken broth, can plum tomatoes, white kidney beans, cabbage, ( red lentils ), Swiss chard ( if possible ), detilini pasta, thats my version as im allergic to celery and white kidney beans slow down the rate of carb absorption for weight loss and red lentils are the best lentils for protein.

Since red bell pepper was suggested and I am a vegetarian I am going to add a half teaspoon or more of smoked paprika just because I like it, and vegetable broth. Ditalini is cute.

I add the greens after the pasta.. Easiest satisfying dinner ever! No French bread? Saltines! Tortillas! It is difficult to spoil a minestrone.

Vegetables and pasta soup?… its misleading, you should state that has panceta.
Minestrone is basically leftover soup. Anything goes. I like to add cubed salami and cannelini beans to mine.

I always make this with my leftover hambone/extra ham scraps from Christmas or Thanksgiving 🙂
