Hello CupcakeJemma, I have been drooling over your delicisus channel. However I have tried twice and it doesn't look like it is done right. The first try I put in one packed cup of butter and well it came out as you'd expect. More oily than cake. I just tried again, this time half a cup butter, they came out looking good, but when you remove them from the pan, there is still more oil than I think there should be.. Since I'm living in Canada, Calgary, Alberta to be precise. So I had to convert into cups instead of grams, the other issue is our high altitude here in Calgary. I'm just curious if you have any suggestions for me to try.

Can you make a recipe using almond flour, and or coconut flour, and using erythritol or stevia for sweetener? I'm following the keto diet and would love to have a perfect keto cupcake. Thanks!
Love watching your videos. I made a batch of these and have a question: is it normal for them to taste very eggy?. It seems kind of overpowering to me. This may be because I don't eat eggs in any form and probably haven't had a vanilla cupcake in 40 years, but are you supposed to taste the egg first? I taste egg then butter then sugar, but no vanilla. This is not a criticism in any way – I'm merely asking. I'm making several batches for a party and my usual taster is on a business trip so I can't ask him. Eggs are super nasty (shudder) but I'm assuming the recipe tastes as it should and my taste buds are just wacked. Jeepers I've got indigestion like a mother right now. I'm sure it must be me and vanilla cupcakes are supposed to taste this way. I know everyone but me loves them.

Umm my cupcakes pretty much over flowed then exploded…is it because I used 1 cup of granulated sugar? I thought she said the same amount as the flour?
