  1. Thought I was the only one who liked Spinach with egg. For a real quickie I like to use a Whole Wheat Wrap, some Spinach and an Egg Omelet with Onion and Cheese. Wrap it up and enjoy. Real quick and easy. But I WILL be trying this. It looks just awesome.

  2. I've made these several times! To save myself time on chaotic mornings, I do most of the work the night before. I bake the hashbrowns, make the mixture (for us, bacon and spinach), put the cheese on top (but don't melt it). Cover with foil and refrigerate overnight. Then in the morning, I pull it out, bake until the cheese melts and it's warm all the way through, crack the eggs, and bake as normal. They're just perfect and I don't have to do all the prep while I'm half asleep and getting the day going.
